Scrambled Tempeh

Protein packed, a great brunch dish.

Ingredients

  • 1 tsp turmeric
  • 1/2 tsp kala namak aka black salt
  • 2 Tbs nutritional yeast
  • 8 oz tempeh crumbled
  • 1/2 - 1 cup veggie broth
  • 2 cups potatoes diced
  • 5 cups kale chopped
  • 1 zucchini chopped
  • 1 red onion chopped
  • 1 red bell pepper chopped

Instructions

  • To a sauté pan, add the tempeh, turmeric, kala namak, nutritional yeast and 1/2 cup broth. Cook 5 minutes. Drizzle in more broth as needed to keep everything from sticking.
  • Add the vegetables and cover the pan; cook a further 5 minutes until the potatoes are done. Add more broth as needed.
